Cut the tofu into cubes and pat dry well; peel the sweet potatoes and cut them into small cubes. Finely slice the onion, chop the garlic and grate the ginger.
Heat the coconut oil in a large pan and fry the tofu until golden brown all over. Then take it out and set it aside for a moment.
Cook the onion, garlic and ginger gently in the same pan. Stir in the curry powder and toast briefly until fragrant.
Add the sweet potatoes, then stir in the coconut milk and peanut butter. Bring to the boil and simmer gently until the sweet potatoes are soft.
Fold in the tofu and spinach and leave for a moment until the spinach wilts. Season to taste with the soy sauce and lime juice.
Ladle into bowls and serve with the roasted peanuts and lime. Basmati rice goes well with it.
Good to know
This curry is creamy and soft, yet its flavours stay distinct. Sweet potato and peanut are a particularly good match here. A warm dinner that's on the table without much effort.
Contains soya and peanuts. For children, season only mildly and chop the peanuts or leave them out, depending on age. In pregnancy, heat it right through and use fresh tofu.
