Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · wooden spoon

  1. Cut the chicken into small cubes. Slice the mushrooms and finely chop the onion and garlic.
  2. Heat the olive oil in a large frying pan or saucepan and brown the chicken all over until golden. Take out and set aside briefly.
  3. Melt the butter in the same pan, then soften the onion and garlic. Add the mushrooms and fry until they soften and take on a little colour.
  4. Stir in the risotto rice and toast briefly until translucent. Deglaze with the white wine and stir until most of the liquid has been absorbed.
  5. Stir in the warm chicken stock a little at a time, stirring again and again until the rice is creamy and cooked. Fold in the chicken, parmesan and thyme and season to taste with salt and pepper.
  6. Serve immediately, while the risotto is still creamy and flowing. Finish with a little extra parmesan if you like.

Good to know

There's something unhurried about a risotto like this. It needs a few minutes of attention, but gives you back a wonderfully creamy, honest bowl of food.

Swaps

Butter → ghee (less lactose; still contains milk); parmesan → aged pecorino or another hard cheese not made from raw milk (similarly savoury, often a little more protein); white wine → more chicken stock with a small squeeze of lemon juice (alcohol-free, a little milder); mushrooms → shiitake or king oyster mushrooms (more flavour, a little more fibre depending on the variety)

Allergens

Contains milk (butter, parmesan). For children and in pregnancy, replace the wine with stock, as the alcohol doesn't fully cook off. In pregnancy, also cook the chicken right through.
