Gluten-free creamy Bircher muesli with apple and hazelnuts: fine oats, natural yoghurt, milk and lemon juice make a fresh, mild breakfast.
You’ll need: chopping board · knife · mixing bowl · grater
A breakfast like this feels gentle and familiar. Creamy, fresh and with just the right bite. For me, it's one of the few sweet breakfasts that stays interesting for a long time.
Oats → gluten-free buckwheat flakes (naturally gluten-free, nuttier flavour) Natural yoghurt → Greek yoghurt (creamier, also provides protein) Milk → unsweetened almond milk (mild and gently nutty; contains tree nuts) Honey → cinnamon or a little mashed banana (less added sweetness, more flavour)
Contains milk (natural yoghurt, milk) and tree nuts (hazelnuts). Oats and oat milk contain gluten unless they're labelled gluten-free. For small children, chopped nuts are only suitable with caution. Honey isn't suitable for babies under 1 year old.
Oats mainly contain beta-glucans, a type of soluble fibre. There's also other fibre, which gives the muesli more body and texture overall.
Apple contains small to moderate amounts of vitamin C, as well as potassium and various polyphenols, among other things. Some of the fibre sits in and just under the skin.
Hazelnuts mainly provide monounsaturated fatty acids as well as vitamin E, manganese and copper. They also contribute a little plant protein and fibre.
Not only. Lemon juice brings vitamin C, and its acidity slows down the oxidation of the grated apple, so it turns brown more slowly.
That's individual. Depending on the type, natural yoghurt contains less lactose than milk and provides milk protein; with lactose intolerance or a cow's milk protein allergy, you'll need a suitable alternative.
