  1. Whisk the egg yolks and honey in a metal bowl over a pan of hot water for 5 minutes until thick and pale.
  2. Take the bowl off the heat and keep whisking until the mixture has cooled. Stir in the cinnamon and vanilla extract.
  3. Whip the cream until stiff and fold it into the egg mixture.
  4. Pour the mixture into a loaf tin lined with cling film and leave it to set in the freezer for at least 4 hours.
  5. Peel the oranges with a knife and cut out the segments, and toast the flaked almonds in a dry frying pan for 2 to 3 minutes.
  6. Turn the parfait out, let it thaw for 5 minutes, cut it into 6 slices and serve with the orange segments and flaked almonds.

Good to know

A parfait is ice cream for guests: it needs no ice-cream maker and waits in the freezer until the main course is finished. Cinnamon and orange make it Christmassy.

Swaps

Honey → maple syrup. Cinnamon → gingerbread spice. Oranges → pomegranate seeds. Flaked almonds → chopped pistachios.

Cooking tips

The water should only simmer gently, otherwise the egg yolk sets. A loaf tin lined with cling film makes the parfait easy to turn out.

Storage

Keeps for 3 weeks in the freezer, well wrapped.

Allergens

Contains egg, milk (cream) and almonds (tree nuts); gluten-free. The egg yolk is only whisked warm, so avoid it in pregnancy.
