Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan) and get a baking tray ready.
  2. For the teriyaki sauce, stir the soy sauce, honey, sesame oil, ginger and garlic together until smooth.
  3. Cut the chicken into strips and marinate in some of the sauce for at least 15 minutes. Cut the pepper, broccoli and courgette into bite-sized pieces and spread them over the tray with the olive oil, salt and pepper.
  4. Lay the chicken between the veg and pour over the rest of the sauce. Bake everything in the oven at 200 °C for 15–20 minutes, until the chicken is cooked through and the veg has browned edges.
  5. Finally, check that the chicken is cooked inside and, if needed, leave the tray in the oven for a few more minutes.
  6. Sprinkle with the sesame seeds and serve straight from the tray.

Good to know

A traybake like this saves relaxed evenings. Everything cooks together, picks up lovely roasted flavours and lands on the table with very little effort.

Swaps

Honey → date paste (less free sugar, a few more minerals). Sesame oil → olive oil (more monounsaturated fatty acids). Soy sauce → gluten-free tamari (gluten-free with a similar flavour). Chicken breast → salmon fillet (more omega-3 fatty acids).

Allergens

Contains soya and sesame. Usually fine for children if the garlic and ginger are kept mild, and fine during pregnancy as long as the chicken is cooked all the way through.
