Ingredients
400 g chicken breast fillet
½ tsp Ceylon cinnamon
2 tbsp olive oil
2 tbsp tahini
1 tbsp lemon juice
100 g red cabbage
4 tbsp hummus (made with olive oil, no seed oils)
1 cucumber
2 tsp ground cumin
1 tsp sweet paprika
1 tsp ground turmeric
1 handful of parsley
1 pinch of sea salt
1 pinch of black pepper
Method
You’ll need: frying pan · chopping board · knife
Cut the chicken breast into thin slices and mix thoroughly with the cumin, paprika, turmeric, Ceylon cinnamon, olive oil, sea salt and black pepper. Leave to marinate briefly.
For the sauce, stir the tahini with the lemon juice and a little cold water until smooth. Season with sea salt until it's creamy and pourable.
Finely shred the red cabbage and toss it loosely with a squeeze of lemon juice. Cut the cucumber into half-moons and roughly chop the parsley.
Heat olive oil in a hot frying pan and fry the marinated chicken hard until golden brown and cooked through. Don't overcrowd the pan, so it gets nicely browned.
Spread the hummus on the plates and arrange the red cabbage and cucumber next to it. That gives the plate structure and freshness straight away.
Top with the hot shawarma chicken, drizzle with tahini sauce and finish with parsley.
Good to know
When you want something spicy, fresh and satisfying, this plate is just right. It feels special but stays easy. That's how I like quick cooking with character.
Swaps
Chicken breast fillet → skinless chicken leg (usually juicier, a little more iron); tahini → almond butter (also provides fat and minerals, a little milder in flavour); red cabbage → white cabbage (similar fibre, often a little milder); hummus → mashed chickpeas with olive oil and lemon juice (less processed, same base ingredient)
Allergens
Contains sesame from the tahini and the hummus. Keep the spices mild for children; during pregnancy, make sure the chicken is fully cooked through and the ingredients are fresh and handled hygienically.
