Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife · grater

  1. Preheat the oven to 200 °C (180 °C fan). Wash the potatoes, cut into pieces, toss with olive oil, salt and pepper and pre-bake on a tray for 10 min.
  2. For the gyros marinade, stir together olive oil, paprika, oregano, cumin, garlic powder, salt, pepper and lemon juice. Turn the chicken breast in it and leave to marinate briefly.
  3. Add the chicken to the potatoes on the tray and bake everything at 200 °C for another 20 min, until the potatoes are golden brown and the chicken is cooked through.
  4. Meanwhile, make the tzatziki. Grate the cucumber and squeeze it out well, then mix with the Greek yoghurt, garlic, dill, lemon juice and salt.
  5. Cut the chicken into strips. Halve the cherry tomatoes and build the bowls with roast potatoes, chicken and tomatoes.
  6. Serve with tzatziki and finish with a little oregano and a squeeze of lemon if you like.

Good to know

A bowl like this is wonderfully simple and still really well rounded. Warm, fresh and creamy all at once – that's exactly what makes it so popular.

Swaps

Chicken breast → turkey breast (similar protein, usually a little less fat). Greek yoghurt → skyr (more protein with little fat). Potatoes → sweet potatoes (more beta-carotene and a little more fibre). Dill → parsley (also provides vitamin K and fresh herby notes).

Allergens

Contains milk (Greek yoghurt); gluten-free with the ingredients listed. Suits children well in a mildly seasoned version, and during pregnancy the dish works with well-cooked chicken and yoghurt made from pasteurised milk.
