Ingredients

Method

You’ll need: frying pan · chopping board · knife · grater

  1. Cut the chicken breast into bite-sized pieces and divide the broccoli into small florets. Crush the garlic and finely grate the ginger.
  2. For the sauce, stir the soy sauce, maple syrup, sesame oil, rice vinegar and cornflour together until smooth, so no lumps form later.
  3. Heat the olive oil in a large frying pan and fry the chicken over a high heat until lightly browned on the outside.
  4. Add the garlic, ginger and broccoli and fry briefly. Then add a splash of water, cover the pan and cook the broccoli until tender-crisp.
  5. Remove the lid, pour the sauce into the pan and mix everything well until it thickens slightly and coats the chicken and broccoli with a glossy glaze.
  6. Sprinkle with sesame seeds and serve straight away, with rice or cauliflower rice, or simply on its own.

Good to know

This is on the table quickly and still tastes like proper cooking. Well seasoned, juicy and with some bite – just right for a busy day.

Swaps

Chicken breast → turkey breast (similar protein content and usually very lean). Broccoli → pak choi (also provides vitamin C and is more tender). Maple syrup → date paste (less processed, with small amounts of minerals). Soy sauce → tamari (gluten-free, often a little stronger in flavour).

Allergens

Contains soya and sesame; easy to season mildly for children, fine in pregnancy with fully cooked chicken, and for coeliac disease be sure to use soy sauce labelled gluten-free, or tamari. If you use honey instead of maple syrup: no honey for babies under one year old.
