Gluten-free buckwheat walnut bread with psyllium husks, linseed and walnuts: moist, nutty and wheat-free – a simple bread for every day.
You’ll need: oven · loaf tin · chopping board · knife · mixing bowl
This bread is simple, honest and pleasantly moist. It's easy to make ahead and still tastes really good the next day.
Walnuts → pecans (similarly nutty, usually a little milder) | Linseed → chia seeds (also contain fibre, swell well) | Coconut oil → olive oil (more monounsaturated fats) | Buckwheat flour → gluten-free oat flour (milder in flavour, a little more soluble fibre)
Contains walnuts; if you eat gluten-free, use certified gluten-free buckwheat flour. Suitable for children in small slices that are easy to chew; during pregnancy the ingredients are common, as long as you tolerate nuts. Contains: tree nuts (walnuts).
Buckwheat provides complex carbohydrates, fibre and minerals such as magnesium and manganese. Depending on processing, it also contains smaller amounts of iron and B vitamins.
Both mainly contain unsaturated fats, including alpha-linolenic acid. Linseed contains considerably more of it than walnuts.
Psyllium husks consist largely of soluble fibre and bind a lot of water. That gives the gluten-free dough more structure and helps the bread hold together better after baking.
Many people get on well with linseed, but with a sensitive gut or in very large amounts it can cause bloating. Drink enough, because it swells a lot.
Walnuts provide copper, manganese and vitamin E, among others, plus plant compounds. In this bread they also add a slightly bitter, nutty flavour.
