Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · mixing bowl · sieve · wooden spoon

  1. Rinse the buckwheat thoroughly in a fine sieve. This cleans it and gives it a milder flavour.
  2. Put the buckwheat and cow's milk in a small saucepan, bring briefly to the boil, then leave to swell over a low heat. Stir now and then until it's creamy.
  3. Meanwhile, wash and core the apple and cut it into pieces. Melt the butter in a frying pan and gently fry the apple with the cinnamon.
  4. Add the honey to the warm apple pieces and toss everything briefly. Take off the heat as soon as the apples are soft and slightly glossy.
  5. If the porridge is still a little too firm, give it a quick stir and loosen it with a small splash of cow's milk if needed.
  6. Spoon the buckwheat porridge into a bowl and top with the warm honey apples. Best served warm straight away.

Good to know

This kind of breakfast feels unhurried. Warm, soft and pleasantly simple. Just right for a morning that shouldn't be loud.

Swaps

Cow's milk → unsweetened almond milk (milder, dairy-free; contains tree nuts); butter → ghee (contains only traces of lactose); honey → date paste (no refined sugar, plus a little fibre); apple → pear (similarly mild)

Allergens

Contains milk, and is only suitable for a strictly gluten-free diet if the buckwheat is labelled accordingly; usually fine for children, but no honey in the first year of life, and in pregnancy the ingredients are fine in normal kitchen amounts.
