Ingredients
100g buckwheat flour
1 organic egg
150ml milk
100g smoked salmon
3 tbsp crème fraîche
1 tbsp grass-fed butter (for frying)
1/2 unwaxed lemon (juice)
1 handful of dill (fresh)
1 pinch of salt
Method
You’ll need: frying pan · chopping board · knife
Whisk the buckwheat flour with the egg, milk and salt to a smooth, fairly thin batter. Leave the batter to rest briefly so it comes together better.
Heat a non-stick frying pan over a medium heat and melt the grass-fed butter in it. Add the batter in portions to make small, round blini.
Fry the blini on both sides until golden brown outside and just cooked through inside. Then transfer to a plate and leave to cool briefly.
Stir the crème fraîche with a little lemon juice until smooth. Tear or cut the smoked salmon into bite-sized pieces and roughly chop the dill.
Spread the blini with the crème fraîche and top with the smoked salmon. Finish with dill and a little lemon juice.
Serve immediately, while the blini are still slightly warm and the contrast with the cool topping is at its best.
Good to know
These blini are simple but special. They look elegant without being complicated. Just the thing when it needs to be quick but still look the part.
Swaps
Crème fraîche → Greek yoghurt (a little more protein, tangier); milk → kefir (fermented); grass-fed butter → ghee (can take high heat, only traces of milk protein); smoked salmon → smoked trout (similar protein content, often a little milder in flavour)
Allergens
Contains egg, milk and fish. Generally fine for children, though keep the smoked salmon to small amounts because of its salt content and texture. In pregnancy, leave out the smoked salmon, as it isn't heated here.
