Gluten-free Bircher muesli with apple and walnuts

Gluten-free Bircher muesli with apple and walnuts: a creamy breakfast with oats, natural yoghurt, milk, fresh apple, linseed and cinnamon.

Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · grater

  1. In the evening, stir the oats with the milk and linseed or chia seeds in a bowl. Cover and leave to soak in the fridge overnight.
  2. In the morning, coarsely grate one apple and mix it straight away with the lemon juice. That way it stays fresh and adds a gentle tang to the muesli.
  3. Stir the grated apple into the soaked oats together with the natural yoghurt. Season with honey or maple syrup and a little cinnamon.
  4. Cut the second apple into thin slices. Roughly chop the walnuts.
  5. If you like your muesli a little looser, stir in another small splash of milk. Leave for a moment so everything comes together.
  6. Spoon into bowls and serve with the apple slices and walnuts.

Good to know

For me, Bircher muesli is the kind of breakfast that gives you a relaxed start to the day. Creamy, fresh and pleasantly satisfying without being heavy.

Swaps

Natural yoghurt → skyr (more protein), milk → unsweetened kefir (fermented, with a natural tang), walnuts → almonds (more vitamin E), honey or maple syrup → mashed banana (natural sweetness plus fibre)

Allergens

Contains dairy and tree nuts (walnuts); made with the gluten-free oats, the muesli is gluten-free; well suited to children if the nuts are chopped to suit their age, and unremarkable during pregnancy as long as the dairy products are pasteurised.
