Ingredients

Method

You’ll need: frying pan · chopping board · knife · grater

  1. Cut the pre-cooked beetroot into 5 mm thick slices and pat them dry with kitchen paper.
  2. Roughly chop the walnuts and toast them in a dry frying pan for 3 minutes. Add the honey and let it caramelise for 1 minute.
  3. Grate the orange zest and stir it into the soft goat's cheese with the thyme and pepper.
  4. Using two teaspoons, put a dollop of the cheese cream on each beetroot slice.
  5. Sprinkle over the honey walnuts and arrange the bites on a platter.

Good to know

Instead of bread, a slice of beetroot carries the topping here. Soft goat's cheese and honey walnuts go well with its earthy sweetness. The bites are quick to make and gluten-free.

Swaps

Soft goat's cheese → herb cream cheese (milder). Walnuts → pistachios. Honey → maple syrup. Beetroot → cucumber slices.

Cooking tips

Vacuum-packed, pre-cooked beetroot saves time. Raw beetroot cooks wrapped in foil at 200 °C (180 °C fan) in about 50 minutes. Wear gloves – beetroot stains.

Storage

Top the slices no more than 2 hours before serving, or the beetroot will stain the cheese. The cheese cream and nuts keep separately for 2 days.

Allergens

Contains milk and walnuts; gluten-free, no egg. Suitable for children (no honey for babies under one year old); in pregnancy, only use soft goat's cheese made from pasteurised milk.
