Ingredients

Method

You’ll need: oven · frying pan · baking tray · chopping board · knife · spatula

  1. Preheat the oven to 200 °C (180 °C fan). Wash the sweet potatoes, cut them into wedges and toss them on a baking tray with olive oil, paprika, sea salt and black pepper.
  2. Roast the sweet potato wedges in the oven at 200 °C for 20–25 min until soft and coloured at the edges. Turn them once halfway through so they cook evenly.
  3. For the chimichurri, finely chop the parsley and coriander. Stir together with the garlic, olive oil, red wine vinegar, chilli flakes and a little sea salt.
  4. Pat the beef steaks dry just before frying and season with sea salt and black pepper. Heat a heavy frying pan until very hot and sear the steaks well on both sides.
  5. Leave the steaks to rest briefly after frying so the juices spread better. Then slice them as you like.
  6. Arrange the beef steaks with the sweet potato wedges and spoon the chimichurri over the top or serve it alongside.

Good to know

A meal with little fuss and lots of flavour. Juicy steak, crispy wedges and a fresh sauce that brings it all together.

Swaps

Beef steak → chicken breast (similar protein content) | Sweet potatoes → roast potatoes (a little milder) | Coriander → more parsley (similarly fresh, often more popular) | Red wine vinegar → lemon juice (fresh flavour, provides vitamin C)

Allergens

The recipe is naturally gluten-free and contains none of the classic major allergens such as milk, egg, soya or nuts. Use the chilli flakes sparingly for children; in pregnancy, cook the steak right through.
