Gluten-free banana bread sweetened with banana only, made with oat flour, almond flour and chia seeds – moist, nutty and with walnuts.
You’ll need: oven · loaf tin · chopping board · knife · mixing bowl
This banana bread is simple, moist and pleasantly sweet from ripe banana alone. It goes well with coffee, at breakfast or as a snack in between.
Oat flour → buckwheat flour (gluten-free and slightly more minerals) Walnuts → chopped hazelnuts or pecans (similarly crunchy, different fatty acids)
Contains tree nuts (almond flour, walnuts); with coeliac disease, only use oats that are clearly labelled gluten-free – for children and during pregnancy, the ingredients are usually unremarkable in normal kitchen amounts.
Chia seeds provide fibre, some plant protein and alpha-linolenic acid, an omega-3 fatty acid. They also contain minerals such as calcium and magnesium.
Oats contain soluble fibre such as beta-glucans. If your gut is very sensitive, how well you get on with that amount of fibre can vary from person to person.
Almond flour mainly contains unsaturated fatty acids, vitamin E, magnesium and some protein. Fat content and nutritional values can vary a little depending on the manufacturer.
As bananas ripen, they contain less starch and taste sweeter, which makes up for leaving out added sugar here. They also provide potassium and vitamin B6.
