Gluten-free baked oats with berries: warm baked oats with rolled oats, apple, raspberries, cinnamon and milk.
You’ll need: oven · baking dish · mixing bowl · grater
A breakfast like this feels like a slow morning from the oven. Soft, fruity and pleasantly warm – without much effort.
Milk → unsweetened coconut milk from a carton or whole milk (creamier, often more satisfying) Almond milk → unsweetened cashew milk or gluten-free oat milk (milder flavour) Sweet apple → pear or mashed banana (natural sweetness, moist texture) Berries → diced plums or cherries (fruity, a different mix of polyphenols)
Contains milk (or tree nuts with almond milk). Oats contain gluten – only use oats labelled gluten-free. Usually well suited to children and during pregnancy, as long as milk and berries agree with you.
Rolled oats contain soluble and insoluble fibre. Beta-glucans, which are typical of oats, are particularly well known.
Berries contain vitamin C, fibre and various polyphenols, including anthocyanins. How much depends on the variety and ripeness.
Grated, baked apple is often perceived as milder than raw. If you have a sensitive stomach or fructose intolerance, how well you tolerate it can still vary.
Milk mainly provides calcium, iodine, protein and, depending on the product, vitamin B12. Unsweetened almond milk can be made up quite differently and often contains less protein.
Cinnamon contains aromatic plant compounds and small amounts of minerals, but it's usually only used in small amounts. Here it mainly adds warmth and a gentle sweetness to the oats.
