Method

You’ll need: frying pan · saucepan · chopping board · knife

  1. Quarter and core the apples and cut them into cubes.
  2. Melt the butter in a pan, add the apples and half the honey and fry for 5 minutes until lightly caramelised.
  3. Pour in the apple juice and lemon juice, add the raisins, cinnamon, cloves and star anise and simmer the compote, covered, for 10 minutes. Remove the cloves and star anise.
  4. Slit the vanilla pod, scrape out the seeds and stir them into the skyr with the rest of the honey.
  5. Toast the walnuts in a dry frying pan for 3 minutes and roughly chop them.
  6. Layer the vanilla skyr and the compote, warm or cooled, in four glasses and scatter over the walnuts.

Good to know

This compote tastes like baked apples but is ready in 20 minutes instead of an hour. The apples first caramelise in butter and honey, then simmer with clove and star anise. The vanilla skyr alongside is cool and fresh.

Swaps

Skyr → Greek yoghurt (creamier) or soya yoghurt (contains soya; for a vegan version, also swap the butter for coconut oil and the honey for maple syrup). Walnuts → almonds. Raisins → chopped dates. Honey → maple syrup.

Cooking tips

Use tart apples such as Boskoop if you want the compote to fall apart softly, and Elstar if you like pieces. The compote tastes good warm or cold.

Storage

The compote keeps in a jar in the fridge for 5 days; only add the skyr and nuts just before serving.

Allergens

Contains milk and walnuts; gluten-free, no egg. Suitable for children (no honey for babies under one year old) and in pregnancy.
