Ingredients

Method

You’ll need: saucepan · mixing bowl · wooden spoon · ladle · whisk

  1. Bring the chicken bone broth to the boil and poach the chicken breast in it over a low heat for 15 minutes. Lift it out and shred it with two forks.
  2. Add the rice to the broth and simmer for 15 to 18 minutes until soft.
  3. Squeeze the lemons. Whisk the eggs and lemon juice in a bowl until frothy.
  4. Gradually whisk two ladlefuls of the hot broth into the eggs so they don't set.
  5. Take the pan off the heat and stir in the egg mixture. Warm the soup for 2 minutes, stirring, without letting it boil, until it thickens slightly.
  6. Return the chicken to the pan and season with salt and pepper. Serve the soup with chopped dill and a few drops of olive oil.

Good to know

Avgolemono is Greece's answer to chicken soup: comfort in a pot. Egg and lemon make the broth creamy, without any cream or flour.

Swaps

Short-grain rice → orzo (then not gluten-free). Chicken breast → skinless chicken thighs. Dill → parsley. Chicken bone broth → vegetable stock (milder).

Cooking tips

Once the eggs are in, the soup mustn't boil again, or the egg will curdle. It thickens further by the next day, so just add a little broth.

Storage

Keeps for 2 days in the fridge; reheat it gently without boiling.

Allergens

Contains egg, and the broth may contain celery; no gluten, milk or nuts. Suitable in pregnancy if the soup is heated until steaming hot after the eggs go in.
