Gluten-free apple wedges with peanut butter and cinnamon: a quick recipe with apple, unsweetened peanut butter, Ceylon cinnamon and optional almonds or cacao nibs.
You’ll need: chopping board · knife
When it needs to be easy but still really good, I especially like a plate like this. Sweet, creamy and crunchy, with hardly any effort.
Peanut butter → almond butter (milder flavour) Peanut butter → cashew butter (creamier, slightly sweet flavour) Chopped almonds → walnuts (more omega-3 fatty acids, more bite) Cacao nibs → coconut chips (milder, naturally sweet crunch)
Peanuts and almonds are common allergens. For children, only serve them in a suitable form and under supervision; during pregnancy, the ingredients are generally fine in normal amounts as long as you tolerate them well.
Ceylon cinnamon is milder in flavour and contains much less coumarin. Cassia is more common, but if you eat a lot of it regularly, its coumarin content is the more important point.
Unsweetened peanut butter mainly provides unsaturated fatty acids, protein, magnesium and niacin. Depending on the product, it can also contain small amounts of vitamin E and folate.
Cacao nibs contain fibre and minerals such as magnesium and iron. They add a slightly bitter, chocolatey crunch.
With the skin, an apple usually provides more fibre and plant compounds. If raw skin isn't for you, a peeled apple may be more pleasant.
That's individual: almonds are firmer and contain more fibre, while peanut butter is often softer and easier to eat. If you have a nut or peanut allergy, neither is suitable, of course.
