Ingredients
100 g almond flour
3 organic eggs
50 ml almond milk
1 tbsp coconut sugar
1 handful of blueberries
1 tsp baking powder
1 tsp coconut oil
Method
You’ll need: frying pan · mixing bowl · spatula
Briefly whisk the eggs with the coconut sugar in a bowl until frothy. Then stir in the almond milk.
Add the almond flour and baking powder and stir to a smooth, fairly thick batter. Leave the batter to stand briefly so the almond flour can absorb the liquid.
Heat the coconut oil in a non-stick frying pan over a medium heat. Spoon small portions of batter into the pan and flatten them slightly.
Scatter the blueberries over the pancakes as soon as the batter is in the pan. Cook until the edges look set and the underside is golden brown.
Carefully turn the pancakes and briefly cook the second side. Keep them warm on a plate if needed.
Stack the gluten-free almond flour pancakes on a plate and serve them warm.
Good to know
These pancakes are uncomplicated and pleasantly moist. They do without the usual wheat flour and still taste rounded and soft.
Swaps
Almond milk → whole milk or unsweetened coconut milk (more protein or a richer texture, depending on your choice) | Coconut sugar → date paste (adds a little potassium and a softer sweetness) | Blueberries → raspberries (more fibre per serving) | Coconut oil → ghee or olive oil (heat-stable, or more monounsaturated fatty acids)
Allergens
Contains eggs and almonds (tree nuts, including the almond milk), so not suitable for people with an egg or tree nut allergy. Usually easy for children to eat; for very small children, cut the berries up. During pregnancy the ingredients are normal, as long as the eggs are well cooked.
