Method

You’ll need: saucepan · milk frother · wooden spoon · whisk

  4. Pour the spiced milk over the espresso and spoon the foam on top.
  5. Dust the gingerbread latte with a pinch of gingerbread spice and serve straight away.

Good to know

In Advent, almost every café sells a gingerbread latte, usually with plenty of syrup. At home, all you need is gingerbread spice, a teaspoon of cocoa and a little honey in the milk. You can make the foam without a machine, using a whisk.

Swaps

Milk → oat milk (vegan, then maple syrup instead of honey; labelled gluten-free). Espresso → strong filter coffee. Honey → maple syrup. Gingerbread spice → cinnamon and a pinch of ground cloves.

Cooking tips

Only heat the milk to about 65 °C; that way it froths well and tastes mild.

Storage

Best drunk fresh; the spiced milk keeps for 1 day in the fridge without the espresso.

Allergens

Contains milk; no gluten, egg or nuts. Espresso contains caffeine and isn't for children; in pregnancy, 200 mg of caffeine a day is the upper limit – that's about two to three espressos.
