Ingredients

Method

You’ll need: saucepan · chopping board · knife · sieve

  1. Peel the ginger and cut it into thin slices.
  2. Bring the ginger to the boil with the water and cinnamon stick and let it infuse, covered, over a low heat for 10 minutes.
  3. Slice half the lemon and squeeze the other half.
  4. Take the pan off the heat, add the lemon juice and orange juice and leave the tea to cool until it's warm enough to drink.
  5. Stir in the honey, pour the tea through a sieve and serve it with the lemon slices.

Good to know

Ginger, lemon and honey are the classic for grey winter days. A little orange juice makes the tea rounder and less sharp. Only stir in the honey once the tea is no longer boiling.

Swaps

Honey → maple syrup (vegan). Orange juice → apple juice. Cinnamon stick → 2 cardamom pods. Lemon → lime.

Cooking tips

Young ginger with thin skin doesn't need peeling – just scrub it. The longer it infuses, the hotter the tea.

Storage

Without honey, it keeps cooled in the fridge for 3 days; warm it up to drink and then sweeten it.

Allergens

Vegetarian, gluten-free, no milk, egg, nuts or caffeine. Suitable for children over one year old and in pregnancy in normal amounts.
