Ingredients
100g strawberries
150g desiccated coconut
4 tbsp coconut milk
2 tbsp maple syrup
50g cocoa powder
2 tbsp coconut oil
Method
You’ll need: stick blender · grater
Hull the strawberries, removing the green tops, and blend them finely to a smooth fruit purée.
Stir the strawberry purée with the desiccated coconut, coconut milk and maple syrup until you have a mixture you can shape.
Shape the mixture into small bars and put them in the freezer until firm.
Carefully melt the coconut oil and stir it with the cocoa powder and maple syrup into a smooth chocolate coating.
Dip the frozen strawberry coconut bars into the chocolate and leave them to set on a rack or baking paper.
Enjoy well chilled, and until then keep them in the fridge or briefly in the freezer.
Good to know
These bars are cool, moist and pleasantly chocolatey. They're a bit like chilled chocolate confectionery, only fruitier. Just right when you want to make something sweet without much effort.
Swaps
Maple syrup → date paste (also adds fibre) | strawberries → raspberries (also contain fibre and polyphenols) | coconut oil → cacao butter (a more classic melt for the coating)
Allergens
The recipe is naturally dairy-free, egg-free and gluten-free, provided all products are made accordingly. Only offer small children suitably sized pieces because of the firm texture; during pregnancy, well-washed strawberries and properly chilled bars are important.
