Ingredients

Method

You’ll need: oven · saucepan · baking tray · stick blender · chopping board · knife · sieve · ladle

  1. Preheat the oven to 200 °C (180 °C fan). Roughly chop the tomatoes, peppers and onion, and keep the garlic in its skin.
  2. Spread the vegetables on a baking tray, drizzle with olive oil and season with pepper. If your vegetable stock is already salty, hold off on salt until later.
  3. Roast everything at 200 °C for 25–30 min until the vegetables are soft and coloured at the edges. Then squeeze the garlic out of its skin.
  4. Tip the roasted vegetables and their juices into a pan. Add the stock, balsamic vinegar and basil and blend until smooth.
  5. Warm the soup briefly if needed and season to taste. For an especially creamy texture, blend again thoroughly or press it through a sieve.
  6. Ladle into bowls and serve with a little basil or a small drizzle of olive oil.

Good to know

This soup is all about roasted flavours and a gentle sweetness from the oven. It's simple and warming, and tastes like far more work than it is.

Swaps

Basil → oregano (a more robust herb flavour). Balsamic vinegar → lemon juice (also adds vitamin C). Vegetable stock → homemade stock (often fewer additives and easier to control the salt). Olive oil → avocado oil (heat-stable, with monounsaturated fats).

Allergens

The soup is usually naturally gluten-free and vegan, as long as the vegetable stock fits; season mildly for children, and in pregnancy make sure the vegetables are thoroughly washed and the herbs fresh and well washed.
