Mash the banana with a fork until smooth. Put the oats, oat milk, water, mashed banana, cinnamon and salt in a small pan and stir well. Warm the mixture over a medium heat, stirring, bring briefly to the boil, then simmer gently until the porridge turns creamy. If it gets too thick, stir in a little oat milk or water until smooth. Wash the blueberries and have the peanut butter ready. Spoon the hot porridge into a bowl, top with the blueberries and add the peanut butter. Good to know A porridge like this makes for a slow, easy start to the morning. Sweet from the banana, creamy on the spoon, warm and comforting.
Swaps Peanut butter → almond butter (more vitamin E) | Oat milk → unsweetened almond milk (usually a little thinner) | Blueberries → raspberries (more fibre) | Banana → unsweetened apple purée (milder sweetness, similarly fruity)
Allergens Contains gluten (oats, oat milk) and peanuts; if needed, use gluten-free oats. Good for children once nut butters have been introduced in an age-appropriate way; during pregnancy the ingredients are common and unremarkable.
