Ingredients

Method

You’ll need: mixing bowl

  1. Stir the soya yoghurt with the maple syrup in a bowl until smooth.
  2. Line a flat container or small tin with baking paper and spread the yoghurt mixture evenly over it.
  3. Scatter the raspberries and blueberries on top and press them lightly into the yoghurt.
  4. Sprinkle over the cacao nibs, chopped almonds and a few sea salt flakes.
  5. Put the tin in the freezer until the mixture is firm. Then break it into bars or pieces.
  6. Serve straight away, slightly thawed.

Good to know

When you want something cold, creamy and a little crunchy, these bars are just right. Quick to make, pleasantly fresh and ready in the freezer without much effort.

Swaps

Soya yoghurt → coconut yoghurt (usually dairy-free, often a little creamier) | almonds → walnuts (more omega-3 fatty acids) | maple syrup → date paste (also adds a little fibre) | cacao nibs → chopped dark chocolate made without refined sugar (milder flavour)

Allergens

Contains soya and almonds (tree nuts). Nibs and almonds are only suitable for small children with care because of the hard pieces; during pregnancy the ingredients are no cause for concern in normal amounts, as long as the soya yoghurt is pasteurised.
