Method

You’ll need: chopping board · knife · sieve · grater

  1. Peel the bananas, halve them crossways and push an ice lolly stick into each half from the cut end.
  2. Stir the skyr and honey until smooth and pour the cream into a tall glass.
  3. Dip the bananas into the skyr, let the excess drip off briefly and roll them all over in the desiccated coconut.
  4. Lay the bananas on a board lined with baking paper and press two cacao nibs into the skyr for eyes and one for a mouth.
  5. Freeze the ghosts for 2 hours until firm.
  6. Let them thaw for 5 minutes before serving, so they're creamy inside.

Good to know

Ghosts on a stick: bananas in a skyr coat, rolled in coconut, with eyes made of cacao nibs. After two hours in the freezer, they taste like ice cream. The sweetness comes from the banana and a spoonful of honey.

Swaps

Skyr → Greek yoghurt (creamier). Honey → maple syrup. Cacao nibs → raisins. Desiccated coconut → ground almonds (contains tree nuts).

Cooking tips

Use bananas without brown spots, so they stay firm when you dip them. If the skyr is too thick, stir in a tablespoon of milk.

Storage

Keeps for up to 2 weeks in the freezer in a freezer bag.

Allergens

Contains milk; gluten-free, no egg or nuts. Because of the honey, not suitable for babies under 1 year old; fine in pregnancy.
