Good to know

In East Frisia, tea isn't just a drink, it's a ritual. In winter it becomes punch: strong black tea with orange, cinnamon and honey. It needs no more than 4 minutes to steep, or it turns bitter.

Swaps

Black tea → rooibos tea (caffeine-free, for children). Honey → maple syrup (vegan). Orange juice → mandarin juice. Cinnamon stick → 1 star anise.

Cooking tips

An East Frisian tea blend made with Assam is strong enough to stand up to orange juice. Always steep and strain the tea first; don't boil it with the juice.

Storage

Best fresh; once cooled, keeps for 2 days in the fridge.

Allergens

Vegetarian, gluten-free, no milk, egg or nuts. Contains caffeine; for children, make it with rooibos tea. In pregnancy, only in moderation because of the caffeine. Because of the honey, not for babies under 1 year old.
