Ingredients
150 g gram flour
200 ml water
1 tbsp olive oil
1 avocado
1 tbsp lemon juice
1 tsp baking powder
1 tsp sesame seeds
Method
You’ll need: waffle iron · chopping board · knife
Stir the gram flour with the water, olive oil, baking powder and a little salt into a smooth batter. Leave it to stand briefly so it becomes more even.
Preheat the waffle iron and grease it lightly. Cook the batter in batches until the waffles are golden brown and cooked through.
Halve the avocado, remove the stone and cut the flesh into thin strips. Drizzle them with lemon juice straight away.
Let the steam escape from the waffles briefly so they stay firm on the outside. Then put them on plates or a wire rack.
Arrange the avocado strips on the warm waffles. Season with a little salt and sprinkle with sesame seeds.
Serve the chickpea waffles straight away, while they're still warm and the avocado is cool and creamy.
Good to know
When it needs to be quick but still taste like a proper meal, these waffles are a good idea. Savoury, soft and with a creamy layer on top.
Swaps
Sesame → chopped walnuts (also provide omega-3 fatty acids; contain tree nuts). Avocado → hummus made with olive oil (also provides protein and fibre). Lemon juice → lime juice (similar acidity, vitamin C).
Allergens
Contains sesame; depending on the baking powder, there may be traces of other allergens. Fine for children if the texture is soft; in pregnancy, use fresh ingredients and prepare them hygienically.
