Ingredients

Method

You’ll need: oven · frying pan · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan). Scrub the celeriac thoroughly, cut off the roots and leave the skin on.
  2. Rub the celeriac with olive oil and salt, put it on a piece of foil with the thyme and unpeeled garlic cloves and wrap it up.
  3. Cook the celeriac at 200 °C for 75 minutes. Open the foil and bake for another 15 minutes until a knife slides in easily.
  4. Roughly chop the hazelnuts. Heat the butter in a frying pan until it foams, smells nutty and starts to brown, and toast the hazelnuts in it for 2 minutes.
  5. Squeeze the roasted garlic out of its skins and mix it with the yoghurt, lemon zest, lemon juice and pepper.
  6. Cut the celeriac into thick slices at the table, pour over the hazelnut butter, shave the hard cheese over it and serve the yoghurt alongside.

Good to know

A whole celeriac, cooked in the oven like a roast and carved at the table. Inside, it turns soft and slightly sweet, while the skin browns. It comes with brown butter and hazelnuts and a roasted garlic yoghurt.

Swaps

Butter → olive oil (without the toasty flavour of brown butter). Hazelnuts → walnuts. Greek yoghurt → skyr.

Cooking tips

The cooking time depends on the size: a skewer has to slide into the centre without resistance. Take the pan off the heat as soon as the butter smells nutty, or it will turn bitter.

Storage

Leftovers keep in the fridge for 3 days; fry slices in a pan.

Allergens

Contains celery, milk and hazelnuts; gluten-free, no egg. Suitable for children; as a long-aged cheese, the hard cheese is also fine in pregnancy.
