Fennel and apple juice

Vegan fennel and apple juice with tart lemon. One of the mildest juices around, with a pleasant aniseed note and a very gentle flavour.

Ingredients

Method

You’ll need: blender · chopping board · knife

  1. Rinse the fennel bulb under cold water and cut it into rough chunks.
  2. Quarter the apple, core it and add the wedges to the fennel.
  3. Squeeze the juice of the half lemon into the blender jug and add the water.
  4. Blend everything on a high setting to a purée.
  5. Pour the mixture through a clean linen cloth and squeeze out the pulp firmly.

Good to know

Fennel is good for more than boring tea. With apple, it makes a fresh juice with a gentle aniseed flavour.

Swaps

Lemon → lime (if lemon feels too ordinary, a zingy lime brings a slightly more interesting, exotic note).

Cooking tips

Don't cut off the soft green fennel fronds. You can put them in the blender too, and you'll get a much nicer colour.

Storage

The intense aroma of fennel unfortunately fades quickly in the air. It's best to always make the juice fresh.

Allergens
