Ingredients
150 g pudding rice
400 ml coconut milk
300 ml oat milk
2 tbsp maple syrup
200 g frozen mixed berries
1 tsp vanilla extract
1 tsp chia seeds
1 pinch of salt
Method
You’ll need: saucepan · wooden spoon
Put the pudding rice, coconut milk, oat milk, vanilla extract and a pinch of salt in a saucepan and bring to the boil.
Turn the heat right down and let the rice swell gently, covered. Stir from time to time so the rice pudding stays creamy and nothing catches.
Towards the end of the cooking time, stir in some of the maple syrup. If the pudding gets too thick, stir in a little oat milk until smooth.
For the compote, warm the frozen berries separately until they're soft and release their juice. Stir in the remaining maple syrup and the chia seeds.
Leave the berry compote to stand briefly so it thickens slightly. Stir once more if needed and taste.
Spoon the coconut rice pudding into bowls and top with the warm or cooled berry compote. Serve warm or leave to chill and set.
Good to know
There's something comforting about a rice pudding like this. Creamy, mild and with a fruity contrast on top. It tastes just as good warm as straight from the fridge.
Swaps
Oat milk → unsweetened almond milk (milder; contains tree nuts) | Maple syrup → date syrup (also provides small amounts of minerals) | Frozen mixed berries → blueberries (often a little milder, contain anthocyanins) | Chia seeds → finely ground linseed (also provides fibre)
Allergens
Contains gluten (oat milk, unless labelled gluten-free); chia seeds only make sense for small children in a suitable consistency, and in pregnancy the recipe, with its heated ingredients, is generally fine.
