Method

You’ll need: oven · frying pan · baking tray · stick blender · cookie cutters

  1. Knead the spelt flour, salt, most of the cold butter in pieces, a third of the honey and the egg yolk into a shortcrust dough. Chill it for 30 minutes.
  2. Preheat the oven to 180 °C (160 °C fan). Roll out the dough 4 mm thick and cut out 24 rounds.
  3. Bake the rounds on a baking tray lined with baking paper at 180 °C for 10 to 12 minutes, until the edges are light brown, then leave them to cool.
  4. Pull the kataifi into small pieces and toast it in the remaining butter in a frying pan for 4 to 5 minutes, until golden brown and crisp.
  5. Blend the pistachios with the tahini and half of the remaining honey into a spreadable cream, stir in the kataifi and spread the cream over the rounds.
  6. Melt the coconut oil, stir in the cocoa and the rest of the honey, and use a spoon to drizzle stripes over the cookies. Leave them to set in the fridge for 20 minutes.
