Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · sieve

  1. Line a sieve with a clean tea towel and set it over a bowl. Mix the yoghurt, salt and vanilla powder and spoon everything into the cloth.
  2. Fold the cloth over the yoghurt, weigh it down with a plate and leave the yoghurt to drain in the fridge for 12 to 24 hours.
  3. Press the drained yoghurt onto baking paper into a 2 cm thick slab and press the raspberries into it side by side.
  4. Melt the coconut oil and stir in the cocoa powder and maple syrup. Chop the pistachios.
  5. Pour the cocoa glaze over the yoghurt, scatter over the pistachios and put everything in the fridge for 15 min until the glaze has set.
  6. Cut the dry yoghurt into pieces and eat it chilled.

Good to know

Dry yoghurt is one of TikTok's yoghurt trends: yoghurt drains overnight in a cloth and turns as firm as cream cheese. With raspberries and a thin layer of cocoa, it tastes like a snack bar. The model is labneh from the Middle East.

Swaps

Greek yoghurt → skyr (a little more protein; 6 hours of draining is enough). Raspberries → blueberries or thawed frozen berries, well drained (in pregnancy, and for children and older people, boil them for 2 minutes first and let them cool). Maple syrup → honey. Pistachios → pumpkin seeds (nut-free).

Cooking tips

The longer the yoghurt drains, the firmer it gets – after 24 hours you can slice it. Pour the glaze onto the cold yoghurt and it will set quickly.

Storage

In a tub, the dry yoghurt keeps for 3 days in the fridge; use the whey in smoothies or bread dough.

Allergens

Contains milk and pistachios; gluten-free and no egg. Nut-free with pumpkin seeds instead of pistachios.
