Ingredients

Method

You’ll need: chopping board · knife · mixing bowl

  1. Roughly chop the almonds and put them into a mixing bowl with the oats. Mix briefly.
  2. Warm the peanut butter with the maple syrup and salt until smooth and sticky. Stir so everything combines well.
  3. Pour the peanut butter mixture over the oats and almonds and work everything together thoroughly. The mixture should be evenly moist and easy to shape.
  4. Line a shallow dish with baking paper and press the mixture in firmly. Smooth the surface.
  5. Stir the melted coconut oil with the cocoa powder to make a topping and spread it over the oat mixture. Chill until everything is firm.
  6. Cut the crunchy oat bars with chocolate into pieces and serve well chilled. Kept in a box in the fridge, they stay firm for a few days.

Good to know

These bars are simple, chocolatey and pleasantly nutty. I like them when I fancy something sweet that's still down to earth.

Swaps

Peanut butter → almond butter (milder, provides vitamin E) | Maple syrup → date paste (natural sweetness plus some fibre) | Almonds → walnuts (provide omega-3 fatty acids)

Allergens

Contains peanuts, almonds (tree nuts) and gluten (oats) unless labelled gluten-free. Serve to children with care because of nut allergies and the firm texture; in pregnancy, the ingredients are generally fine in normal kitchen amounts.
