4 apples
1 tsp cinnamon
1 pinch of sea salt
Method
You’ll need: oven · chopping board · knife
Preheat the oven to 100 °C (80 °C fan) and line two baking trays with baking paper.
Wash the apples, remove the cores and cut them into very thin rings so they dry evenly.
Lay the apple rings side by side on the trays and dust them lightly with cinnamon and a small pinch of sea salt.
Dry the apple chips in the oven at 100 °C for 80–90 min, until they look dry and feel light. Turn them once halfway through so they cook evenly.
Leave the apple chips to cool completely. Only then do they turn properly crisp.
Serve the apple chips as they are or keep them in an airtight container.
Good to know
When apple dries slowly in the oven, it becomes surprisingly intense and smells like childhood. So simple, so good – and much crispier than you'd first think.
Swaps
Apples → pears (similar fibre content, slightly softer flavour); cinnamon → Ceylon cinnamon (milder in taste, usually with less coumarin); sea salt → fine rock salt (same job, more neutral taste); cinnamon → vanilla powder (different flavour, no extra sweetness)
Allergens
The recipe is naturally free from the major allergens; for small children, only offer the hard, crunchy pieces when they suit their chewing stage, and during pregnancy the ingredients are unremarkable in normal kitchen amounts.
