Ingredients
200 g falafel mix
150 g couscous
1 red cabbage
1 cucumber
150 g hummus (made with olive oil, no seed oils)
1 tbsp olive oil
1 squeeze of lemon juice
1 tbsp sesame seeds
1 handful of parsley
Method
You’ll need: frying pan · chopping board · knife
Mix the falafel mix with hot water according to the packet instructions and leave it to swell. Meanwhile, prepare the couscous according to the packet and fluff it up with a fork.
Cut the red cabbage into thin strips and knead it firmly with the lemon juice and a little salt. That makes it more tender and gives it more flavour.
Wash the cucumber and dice it finely. Chop the parsley and have the hummus ready.
Shape the soaked falafel mixture into small balls. Heat the olive oil in a frying pan and fry the falafel until golden brown and crisp all over.
Divide the couscous between bowls and top with the red cabbage and cucumber. Set the falafel on top.
To serve, add a dollop of hummus in the middle and sprinkle everything with sesame seeds and parsley.
Good to know
A bowl like this makes the evening easy. Warm, crunchy and creamy all at once – without much effort, but with a really good bite.
Swaps
Couscous → quinoa (also provides protein and fibre); falafel mix → homemade chickpea falafel (often fewer additives)
Allergens
Contains gluten (couscous) and sesame (sesame seeds and hummus). Fine for children if mildly seasoned; in pregnancy, use fresh ingredients and prepare them hygienically.
