Ingredients
6 tbsp chia seeds
400 ml coconut milk
2 tbsp maple syrup
150 g berries
2 tbsp desiccated coconut
1 tsp vanilla extract
Method
You’ll need: chopping board · knife · mixing bowl
Stir the coconut milk, chia seeds, maple syrup and vanilla extract together thoroughly in a bowl until everything is evenly mixed.
Leave the mixture to stand briefly, then stir vigorously again. This helps the chia seeds swell more evenly and stops lumps forming.
Cover the bowl and leave it in the fridge for several hours, until the pudding has a creamy, thick consistency.
Stir the chia pudding again before serving. If it has become too firm, stir in a small splash of coconut milk until smooth.
Wash the berries and, if needed, cut larger fruit into bite-sized pieces.
Good to know
So simple, so good: this pudding practically makes itself. I especially like it when the morning calls for something cool and creamy.
Swaps
Maple syrup → date purée (fewer free sugars, plus a little fibre); coconut milk → unsweetened almond milk plus 1 tbsp cashew butter (thinner, with a little more protein); berries → kiwi or pomegranate seeds (fresh tartness and vitamin C); desiccated coconut → chopped walnuts (more omega-3 fatty acids and minerals).
Allergens
Depending on the coconut milk and any toppings, this may matter for people with a nut or coconut intolerance. Only serve to children with a suitable texture. During pregnancy, fresh, well-washed ingredients are important.
