Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · ladle

  1. Pat the turkey breast fillet dry and cut it into bite-sized pieces. Wash the courgette and cut it into half-moon slices; trim the fine green beans if needed.
  2. Gently heat the olive oil in a frying pan or wide saucepan. Briefly brown the turkey breast all over until it takes on a little colour.
  3. Add the curry paste and turmeric and fry briefly so the flavours develop. Stir in the courgette and fine green beans.
  4. Pour in the coconut milk and let everything simmer over a gentle heat for a few minutes. The curry should turn creamy and the turkey breast stay juicy.
  5. Season with lime juice and add a little more curry paste if needed. Leave to stand briefly so the spices come together.
  6. Serve hot, spooning the creamy sauce straight onto the plate.

Good to know

A curry like this is just right when it has to be quick but still leave you full and content. Mild, creamy and pleasantly spiced – without feeling heavy.

Swaps

Turkey breast → chicken breast (similar protein content and mild in flavour); courgette → broccoli (more fibre and vitamin C); fine green beans → spinach (provides folate, among other things); olive oil → ghee (heat-stable and aromatic)

Allergens

The recipe is naturally gluten-free and dairy-free, but contains coconut, which some people don't tolerate. A milder seasoning usually suits children better, and during pregnancy make sure the turkey breast is cooked through and the curry paste suits you.
