Creamy tomato chicken with spinach
Creamy tomato chicken with spinach: juicy chicken breast in a mild cream sauce with tomato, baby spinach, garlic and parmesan. Quick, hearty and everyday-friendly.
Halve the chicken breast horizontally and season with salt, pepper and paprika. Finely chop the garlic and dice the tomato.
Heat the olive oil in a large frying pan and fry the chicken on both sides until golden brown. Then take it out of the pan briefly.
Briefly sweat the garlic and tomato in the pan juices. Pour in the cream, stir in the parmesan and let the sauce reduce gently.
Add the baby spinach to the sauce and let it wilt. Season to taste with salt and pepper.
Return the chicken to the pan and cook it in the sauce for 5–8 min until cooked right through. That way it stays juicy and soaks up some of the sauce.
Transfer to plates and serve straight away. Finish with a little extra parmesan if you like.
Good to know
A dish like this is just the thing for tired evenings. Little effort, lots of warmth on the plate, and the sauce rounds everything off nicely.
Swaps
Cream → coconut milk (a slightly different flavour, but dairy-free) | parmesan → pecorino or an aged cow's milk hard cheese (similarly savoury, often a little stronger) | chicken breast → skinless chicken thighs (usually juicier) | baby spinach → chard or kale (more texture, also provide fibre)
Allergens
Contains milk (cream and parmesan). Usually well suited to children if mildly seasoned and the chicken is cooked right through; also suitable in pregnancy with fresh ingredients and chicken that is cooked right through.
