Creamy sweet potato and peanut soup with velvety coconut milk
Creamy sweet potato and peanut soup with velvety coconut milk: a mildly spiced recipe with ginger, lime and turmeric, finely blended and pleasantly hearty.
Peel and dice the sweet potatoes. Finely slice the onion; peel and grate the ginger.
Warm the coconut oil in a pan and cook the onion until soft and translucent. Toast the ginger and turmeric briefly with it until fragrant.
Add the sweet potatoes and pour in the vegetable stock. Bring to the boil, then simmer gently until the cubes are very soft.
Stir in the peanut butter and coconut milk. Blend the soup until smooth and creamy.
Season to taste with lime juice, sea salt and pepper. If you like, adjust the consistency with a little more stock.
Ladle into bowls and serve with a little coconut milk, chopped peanuts or fresh coriander.
Good to know
This soup is soft, rounded and really comforting. It looks simple but tastes surprisingly deep. Just right when you want something warm and uncomplicated.
Swaps
Peanut butter → almond butter (provides vitamin E and unsaturated fats; contains tree nuts); coconut milk → cashew butter plus stock (a little more protein, mild creaminess; contains tree nuts); coconut oil → olive oil (more monounsaturated fats); lime → lemon (just as fresh, provides vitamin C).
Allergens
Contains peanuts, and possibly celery depending on the vegetable stock. For children, season mildly and only serve peanuts in an age-appropriate form; in pregnancy the ingredients are everyday ones – just make sure everything is fresh and heated well.
