At a glance

Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · sieve · wooden spoon

  1. Cook the edamame spaghetti in plenty of salted water until al dente, saving a little pasta water before draining.
  2. Meanwhile, slice the mushrooms, finely dice the onion and chop the garlic.
  3. Heat the olive oil in a large frying pan and fry the onion and mushrooms over a high heat until the mushrooms are browned and there's hardly any liquid left in the pan. Add the garlic and toast briefly until fragrant.
  4. Reduce the heat and add the cashew milk and nutritional yeast to the pan. Stir in a little pasta water until you have a creamy sauce.
  5. Add the edamame spaghetti to the sauce and toss everything well so the sauce is evenly distributed. Fold in the parsley and season with sea salt and black pepper.
  6. Serve straight away, finished with a little extra parsley and black pepper if you like.

Good to know

When it needs to be quick but should still taste like a proper meal, this pasta is spot on. It's creamy, savoury and pleasantly uncomplicated.

Swaps

Cashew milk → unsweetened almond milk (usually a little thinner and milder in flavour); mushrooms → shiitake (more aromatic, also provides fibre); parsley → basil (fresh herby note with different plant compounds)

Allergens

The recipe contains soya (edamame spaghetti) and tree nuts (cashew milk); well suited to children if the pepper is used sparingly, and fine during pregnancy with fresh, thoroughly cooked mushrooms. Contains: tree nuts.
