Creamy chia coconut pudding with mango purée: a cool dessert with coconut milk, chia seeds, sweet mango, vanilla and a little honey – smooth, fruity and pleasantly satisfying.
You’ll need: stick blender · chopping board · knife · mixing bowl · grater
A dessert like this feels quietly luxurious and yet completely uncomplicated. Cool, creamy and with that sunny layer of fruit on top, it's a treat to look at, too.
Honey → 1–2 tsp date paste (more fibre, less free sugar) Sweet mango → berry purée (less sugar, more polyphenols) Coconut milk, stirred until creamy → unsweetened skyr or Greek yoghurt (more protein) Desiccated coconut → chopped walnuts or almonds (more omega-3 or monounsaturated fats, more micronutrients)
The recipe is naturally free from gluten and egg but contains coconut, and for toddlers chia seeds are best served soaked. The ingredients are common during pregnancy, but honey shouldn't be given to babies under 12 months.
Chia seeds mainly provide fibre, plant omega-3 fatty acids, calcium, magnesium and some iron. The exact amounts vary by product and origin.
Mango contains natural sugars, including fructose, and in larger amounts it can cause discomfort in sensitive people.
Coconut milk mainly contains fat, including a lot of saturated fatty acids, plus some manganese. It's creamy and aromatic but provides much less protein than dairy or soya products.
Honey mainly adds sweetness and a little flavour. The amounts of vitamins or minerals are small in everyday cooking and not the main point nutritionally.
Not always. Because they contain a lot of fibre, chia seeds can cause wind if you're not used to them, so well-soaked seeds and a moderate portion are often the more comfortable choice.
