Ingredients

Method

You’ll need: saucepan · chopping board · knife · mixing bowl · grater · wooden spoon

  1. Finely grate the courgette and gently squeeze out any excess liquid if it's very watery.
  2. Put the courgette, oats, chia seeds and almond milk in a pan and stir everything together thoroughly.
  3. Heat the mixture over a medium heat and simmer gently until the porridge turns creamy. Stir now and then so nothing sticks.
  4. Stir in the cinnamon and taste the porridge. Meanwhile, cut the apple into small dice.
  5. Let the porridge stand briefly so the oats and chia seeds soften.
  6. Spoon the porridge into a bowl and scatter the diced apple over the top. Add a little more cinnamon if you like.

Good to know

This is one of those breakfasts that quietly just works. Warm, creamy and pleasantly uncomplicated. And the courgette stays nicely in the background flavour-wise.

Swaps

Almond milk → unsweetened coconut milk from a carton (often a little creamier). Apple → berries (usually less sugar, also provide fibre). Chia seeds → ground linseed (also provides fibre and omega-3 fatty acids). Rolled oats → oat bran (usually more fibre; also contains gluten).

Allergens

Contains gluten (oats) unless the oats are certified gluten-free, and tree nuts (almond milk). Usually suitable for children if the texture is soft, and generally fine during pregnancy – keep chia seeds to normal cooking quantities.
