Ingredients

Method

You’ll need: frying pan · mixing bowl · grater

  1. Coarsely grate the courgettes and squeeze out as much liquid as possible with a clean tea towel. That way the fritters turn nice and crisp later.
  2. Mix the courgette with the onion, egg, flour and cheese in a bowl. Season with salt and pepper and leave the mixture to stand briefly.
  3. Grate the cucumber for the vegan tzatziki and squeeze it out well. Stir it with the soya yoghurt and garlic, then set the dip aside briefly.
  4. Heat the olive oil in a frying pan over a medium heat. Add small portions of the courgette mixture and press them flat.
  5. Fry the fritters on both sides until golden brown and crisp outside. Then leave them to rest briefly on kitchen paper.
  6. Serve the courgette fritters hot with the vegan tzatziki. If you like, add a little more pepper or some fresh herbs on top.

Good to know

Crispy outside, juicy inside – that's how courgette fritters are a joy. Plus a cool dip that brings everything together nice and fresh.

Swaps

Flour → gram flour (more fibre and a little more protein); cheese → feta made from sheep's or goat's milk (stronger flavour, often a little less processed); soya yoghurt → unsweetened coconut yoghurt (dairy-free, creamy texture); olive oil → ghee (stable at high heat for frying).

Allergens

Contains egg, milk, gluten and soya (soya yoghurt in the dip); the fritters themselves aren't vegan. Usually suitable for children; during pregnancy, make sure it's freshly prepared and handle dairy and egg hygienically.
