Ingredients
1 organic egg
200 g courgette
40 g oats
2 tbsp vegetarian hard cheese (Parmesan-style)
1 tsp coconut oil
1 tbsp chives
Method
You’ll need: frying pan · mixing bowl · grater
Coarsely grate the courgette, salt it lightly and leave it to stand briefly. Then squeeze out the liquid thoroughly so the mixture doesn't turn watery.
Mix the courgette with the oats, egg, chives and hard cheese in a bowl. Stir well until you have a mixture you can shape.
Season to taste with salt and pepper and leave the mixture to rest briefly. This lets the oats absorb moisture.
Heat the coconut oil in a frying pan. Add the courgette mixture in portions, flatten and fry over a medium heat until golden brown on both sides.
Leave the finished fritters on a plate for a moment to let the steam escape. That keeps the surface texture nicer.
Good to know
When you want something simple and savoury, these fritters are just right. Golden brown outside, juicy inside – and easy for every day.
Swaps
Oats → almond flour (fewer carbs, a little more vitamin E; contains tree nuts). Hard cheese → mature Alpine cheese (such as Gruyère; similar protein content, stronger in flavour). Coconut oil → ghee or olive oil (whichever you prefer; both are good for frying). Chives → parsley (also adds vitamin K and a fresher herby note).
Allergens
Contains egg, milk and gluten (oats, unless labelled gluten-free); usually good for children if mildly seasoned, and generally fine in pregnancy with a fresh egg and pasteurised or otherwise safe hard cheese.
