Cottage cheese protein flatbread
Viral cottage cheese protein flatbread made with cottage cheese and oats: quick to make in a frying pan, high-protein and easy to top however you like.
Put the cottage cheese, eggs, fine oats, sea salt and garlic powder in a blender or a tall jug. Blend everything until you have a smooth batter.
Heat a non-stick frying pan over a medium heat and grease it thinly with olive oil. Pour in the batter and spread it out evenly.
Cook the flatbread until the underside is golden brown and the top is visibly firmer. Don't move it too early, so it holds together.
Carefully turn it with a large spatula and cook the second side. In the end the flatbread should be cooked through and still flexible.
Slide it onto a board and leave to cool a little. That way it's easier to cut or top neatly.
To serve, add savoury or sweet toppings – for example avocado and smoked salmon, hummus and veg, or quark and berries.
Good to know
This is one of those recipes that seems almost too simple until it hits the pan. Moist, satisfying and just right for days when things need to be quick.
Swaps
Cottage cheese → skyr (more protein, often a little less fat). Oats → buckwheat flakes (naturally gluten-free, also provide fibre). Olive oil → ghee (stable at high heat, full of flavour). Garlic powder → fresh herbs (milder, and bring extra plant compounds).
Allergens
Contains milk and egg, and gluten from the oats unless you use oats labelled gluten-free. Generally suitable for children if the texture and toppings work for them; during pregnancy, only with pasteurised cottage cheese, eggs cooked through and safe toppings such as cooked rather than raw fish. Contains: gluten (oats).
