Ingredients

Method

You’ll need: stick blender · chopping board · knife

  1. Wash the strawberries, hull them and halve or quarter them depending on size.
  2. Blend the cottage cheese with the honey until you have a smooth, creamy mousse.
  3. Roughly chop the cashews so they still add some bite later.
  4. Divide the cottage cheese mousse between glasses or bowls.
  5. Top with the strawberries and scatter over the cashews.
  6. Serve the mousse straight away, or chill it briefly before eating if you like it a little firmer.

Good to know

When it needs to be quick but still look like a dessert, this mousse is just right. Creamy, fresh and on the table without much effort.

Swaps

Less sweet: halve the honey and round it off with cinnamon, vanilla or a few berries | Cashews → walnuts (contain omega-3 fatty acids) | Strawberries → raspberries (also provide fibre) | Cottage cheese → skyr (also provides protein, slightly different texture)

Allergens

Contains milk and tree nuts (cashews). Generally fine for children – for small children, chop the nuts finely or leave them out, and no honey for babies under one year old. In pregnancy, only use fresh, well-washed strawberries and properly chilled cottage cheese.
