Ingredients

Method

You’ll need: frying pan · chopping board · knife · sieve

  1. Soak the glass noodles in hot water, then drain and cut them a little shorter if needed. Cut the tofu into sticks.
  2. Fry the tofu in a frying pan with a little olive oil or avocado oil until golden brown all over. Cut the carrot, cucumber and pepper into thin strips.
  3. Dip the rice paper briefly in warm water until soft and lay it on the work surface. Top the lower third of each sheet with glass noodles, vegetables and tofu.
  4. Fold in the sides and roll the rice paper up tightly. Carry on until the filling and rice paper are used up.
  5. Stir the peanut butter with the lime juice, soy sauce and a little hot water to a smooth dip. If needed, add a little more water to make it creamy.
  6. Serve the summer rolls straight away with the peanut and lime dip. If you like, halve them and arrange them on a platter.
