Method

You’ll need: oven · chopping board · knife · sieve

  1. Preheat the oven to 200 °C (180 °C fan). Drain the chickpeas, rinse them, dry them well and toss with the olive oil, paprika and salt.
  2. Roast the chickpeas in the oven at 200 °C for 25–30 min until golden brown and slightly crisp. Turn them once halfway through so they brown evenly.
  3. Rinse the quinoa thoroughly in a fine sieve and cook it in lightly salted water until fluffy and the liquid has been absorbed.
  4. Halve the cherry tomatoes, dice the cucumber and wash the baby spinach. For the dressing, stir the tahini with the lemon juice, salt and a little lukewarm water until smooth.
  5. Divide the quinoa between bowls and top with the baby spinach, cucumber, cherry tomatoes and roasted chickpeas.
  6. To serve, pour over the tahini dressing and enjoy the bowl fresh.

Good to know

A bowl like this doesn't make a fuss and still feels like really good food. Warm, crunchy, creamy – exactly the kind of plate that's on the table fast.

Swaps

Quinoa → millet (similar mineral content, gluten-free). Tahini → almond butter (also provides unsaturated fats; contains tree nuts). Chickpeas → white beans (mild, also provide fibre). Baby spinach → rocket (more bitter, peppery notes).

Allergens

Contains sesame from the tahini. Suits children well if the chickpeas aren't roasted too hard; in pregnancy it's unproblematic as long as everything is freshly washed and handled hygienically.
